Yesterday, we had the absolute pleasure of dining at De Oesterij 🦪 in Yerseke, and what an exquisite feast it was! From the moment we stepped in, we were enveloped by an atmosphere that radiates authenticity, and the unmistakable passion of a team dedicated to perfection. Every element the pure, unadulterated quality of the ingredients, the thoughtful harmony of flavours, and the artistic presentation of each dish came together seamlessly, creating an experience that was more than just a meal; it was a celebration of the senses.

Each bite was a revelation, an exploration of taste, texture, and essence. The attention to detail was extraordinary; the oysters tasted like the very soul of the sea, and every course that followed seemed to echo the beauty and bounty of the waters that define this remarkable place. And to complete the experience, a carefully chosen wine paired with our meal elevated each flavour to new heights, and even deeper appreciation of what we were tasting, bringing the perfect balance to the plate and glass.

Bud it wasn’t only the food that left an inedible impression the staff at de Oesterij added an irreplaceable dimension to the evening. Their warmth and dedication made us feel genuinely cared for and made us feel both welcomed and wonderfully indulged.

 

 

Dining at De Oesterij in Yerseke is a rare blend of simplicity and authenticity. Here, the charm lies not in extravagant décor, but in a setting that feels grounded and true to the origins of the place. Seated on sturdy wooden benches softened by cushions crafted from rustic jute sacks, we felt immediately at ease. The decor is thoughtful yet unpretentious: a wooden crate filled with the Logo of the Oesterij on each table, accompanied by a small pan of mussels flit with sand, shells and a candle, a simple, playful touch that brings the spirit of the sea directly to your table.

What makes the experience even more special is the view. From where you sit, you can look out over the water basins, where fresh oysters are kept after being harvested from the sea. At the end of the basins is a small dike stretches towards the water, on that dike lies De Oesterij’s second, more intimate restaurant. This smal venue, with its open terrace and a view stretching over the Oosterschelde, offers a tranquil and breathtaking backdrop, where you can watch the gentle ebb and flow of the sea as you dine.

De Oesterij also includes a small, thoughtfully curated museum dedicated to the Oosterschelde and the rich marine life it supports. Tasting at de Oesterij

De Oesterij is not your traditional restaurant with starched tablecloths; it’s a tasting venue that draws its charm from simplicity. On the tasting menu, you’ll find not only Imperial zeeuwse platte Oysters but also the more familiar Zeeuwse Creuse oyster, and de Zeeuwse Oesterij Special Order them individually or as part of a tasting trio, accompanied by a fine glass of wine. Prefer gratin oysters, lobster soup, or a pot of mussels? The ultimate tasting experience is the Fruits de Mer platter, brimming with shrimp, various types of oysters, sea asparagus, Oosterschelde lobster, cockles, and crab. De Oesterij in Yerseke: A Family Business with Passion

De Oesterij is a remarkable family business run by three brothers, the Dhooge family. For over a century, their family has been engaged in the cultivation of shellfish, with their own farming grounds in the Oosterschelde, Grevelingen, and Wadden Sea. Every day, their vessels set sail to bring in the finest harvest.

Upon arriving at the rustic dike in Yerseke, you have no idea of the unique experience waiting for you at the water’s edge. De Oesterij serves as a farm, tasting venue, shop, and information center all in one. While you stroll around and learn more about shellfish farming, the work continues behind the scenes. The authentic oyster beds are still in use, allowing the oysters that come from the Grevelingen and Oosterschelde to settle down and expel any sand they may have swallowed during harvesting.

The three brothers Dhooge started just nine years ago and have since become purveyors of the finest oysters for some of the best restaurants in the world. Their oysters travel globally, from Shanghai to Singapore and Hong Kong. International star chefs eagerly await the Dutch Imperial oyster from De Oesterij, recognizable by its flat, round shell. This rare oyster is delicate and can only be cultivated with great expertise, which is exactly what the Dhooge brothers excel at. For them, only the best is good enough!
